Karathnai (Salthan):

i-ekneulse-esilnai gak kalshases da-esilnai chi-dalsashe
PRES-staggering/drunk*-1PL because past-drink OBJ-1PL

*Literally "Almost falling" ("Ekne"=amost and "ulse"=fall)

As a bonus, here's a little poem about drunkenness, and its effects:

datesk-ne-nenas Lykei gishi-tos
first-FUT-go Lykei much-awaydistance-2

gi-ne-nenas da-kai
much-FUT-go SUBJ-Kai

gi-gi-ne-neas Girela chi-ushi-tos
much-much-FUT-go Girela OBJ-close-2

gi-gi-gi-ne-nases da-tos
much-much-much-FUT-sleep OBJ-2

Basically the poem is:
First Lykei (the divine of grace) will leave you
Then Kai (the divine of knowledge) will go
Then Rela (the divine of power and rage) will come.
Then you sleep.

First, it should be ebrii fimus vinī bibendī. - NOM.PL

Second, it ought to be Ebrii fimus vinō bibendō. - ABL

ebrius + GEN - That sounds suspiciously :got:, not :lat:

Well, I'd translate it the same way, with the "instrumental" ablative.

If you absolutely wanted to use the genitive, you could perhaps say:

Ebrii fimus vini bibendi causa.
or
Ebrii fimus vini bibendi gratia.

Both would mean roughly "We get drunk because of the drinking of wine", with a causal rather than instrumental meaning.

The phrasebook's "*Ebrius fimus", on the other hand... :mrred:

We get drunk (in general/habitually) by drinking wine.

I've not yet determined what the Wayfarer equivalent to alcohol intoxication, if there is one, would be, but this gets the point across reasonably well. "Noise" here refers to the additive white Gaussian variety, and is used rather literally; "to be drunk" translates to "to fail at thinking because of signal interference".
Spoiler:
World/culture/slang-building time: There is a verb Lultasdàıılal /ɬoɬt̪əsʈaɪ̯:ɬəɬ/ that may be said sarcastically to someone who is very drunk as an indicator that they should stop drinking. In the second person form (as it is given there), it means "You are speaking eloquently, from left to right and from above you to a middle ground", which is well-formed morphologically speaking but doesn't make an awful lot of semantic sense. It stems from a "drunken slur" mispronunciation of Saltıstaıılàs /səɬt̪est̪aɪ̯:ɬas/ "I'm not drunk". The combination of directional axis morphemes tas and dàı, since they're used very rarely together in regular speech, became a productive verbal infix meaning "all over the place" or "haphazardly", with a hint of mocking irony.

Hya doesn't specifically mean drunk but refers to anyone who is not thinking straight, covering basically "stupid/crazy/intoxicated". Hyazwa refers specifically to someone who is drunk. Waini is a loan-word from Tok Pisin wain, which is, of course, from English.
